I had two awesome sandwiches yesterday. They both happen to be vegan, but either could be vegetarian.
For lunch I had Cucumber Tomato Dill Sandwiches.
I first topped toast with a mixture of Tofutti cream cheese, dill, garlic powder, and s&p.
Then I topped each piece with cucumber and tomato slices and a sprinkling of dill.
On the side I had broccoli slaw topped with Annie’s Goddess Dressing.
Super easy, light, and fresh lunch.
Dinner was the stuff vegan and vegetarian dreams are made of.
I sliced the tempeh into strips, marinated them briefly in Bragg Liquid Aminos (soy sauce would work too), and cooked them in a pan with a couple of tablespoons of olive oil.
I served the tempeh on toasted Pumpernickel Rye bread, along with sauerkraut, sautéed onions, and OrganicVille Thousand Island dressing. You could add swiss cheese too (vegan or not, whatever floats your boat).
Some chips on the side.
Friggin’ fantastic. I’ll be making these again.
