OK, no farting around. Here was my day yesterday.
Breakfast:

Muesli with banana slices and almond milk. And a foggy camera lens. Whatever.
Lunch:

Vegetarian Sloppy Joes

These take 5 minutes to make. I heated up Boca Ground Crumbles, chopped onion, ketchup, mustard, bbq sauce, and a little brown sugar. I’ve made this so many times I don’t measure amounts. It’s pretty fail proof, though. I served it on a sandwich thin topped with spinach for some extra nutrients.
Quick tip about those chopped onions. If you hate chopping onions or don’t always have fresh onions in the house, a good thing to keep on hand are frozen chopped onions.

Obviously, freshly chopped are better, but in a pinch these work fine.
Dinner:

I used these Dominex Eggplant Cutlets.

Ingredients look good.

I baked the eggplant cutlets (approx. 15 minutes), then topped them with tomato sauce.

Grilled asparagus on the side. Seasoned with sea salt and pepper.

Strawberries on the side as well.

This was the first time we’ve tried the eggplant cutlets and both Ryan and I liked them, so I’m sure I’ll be buying them again. It’s always nice to have some frozen dinner options on hand for quick weeknight dinners.
A couple of hours after dinner I had popcorn + Earth Balance + nutritional yeast.

I’ve said it before, nutritional yeast is like crack!
Workout:
I did get a workout in yesterday too. 20 minute run/walk on the treadmill at various inclines and speeds, followed by a 30 minute ab class.
Pretty decent day for a Monday.

Yes, I dipped veggie bacon in chocolate. And yes, it was delicious.












Oh my. Lunch and dinner both look fantastic! I’m super curious about those eggplant things!
And I think bacon + chocolate would be my boyfriend’s idea of heaven on a plate. haha

Nice! I’ve had chocolate covered bacon before, but never with veggie bacon. I am intrigued!
Ok to be honest when I first saw your veggie bacon in chocolate it looked kind of gross, but after thinking about it for a minute it sounds kinda of good! I would try it!
Haha, I figured if people are using real bacon in cupcakes, chocolate, etc, then veggie bacon may work too. And it did – can’t go wrong with the salty and sweet combo!
