Pickings are pretty slim around here. We are now totally out of fresh fruit and veggies (oh, the horror!). I’ve been scrounging around for the past few days using up the last of everything, but now there’s really nothing left except for pantry staples and other crap I don’t wanna eat. I am grocery shopping tonight!
So, yesterday’s eats were pretty much the last of things…
Breakfast:

A cinnamon raisin bagel thin + peanut butter. Coffee + almond milk.
Lunch:

Half a vegetarian sub from Potbelly’s, leftover from Sunday night’s dinner. I love Potbelly’s, but subs are really meant to be eaten the same day they are made.

The bottom of a bag of tortilla chips and the last of the Cheeze sauce, heated up and topped with chili powder. I licked that dish clean.

And the very last piece of fresh fruit – a lovely apple.
Dinner:

A black bean burger that was frozen from the last time I made them.

The end of a bag of sweet potato waffle fries.

And some sauerkraut, which I recently discovered I kinda like.
I may have been out of fresh fruit, but I wasn’t out of canned. In fact, I found FOUR cans of pineapple chunks in the cabinet. What the heck? Why? Anyway, so dessert was
Cinnamon and Sugar Pineapple Bites


I took a can of pineapple chunks. Drained the juice. Rolled each chunk in a mixture of plain bread crumbs, cinnamon, and sugar. Cooked them in a pan (sprayed with a little oil) on medium for 2 minutes, flipping halfway through.

Pretty sure you can’t go wrong with cinnamon and sugar-coated anything. Awesome.

Yeah, they turned out pretty delicious! Now I’m craving some cinnamon & sugar toast!
