Summer Lovin’

Hi, everyone! Back to the grind, huh?

I had a relaxing weekend. Lots of time outside enjoying what’s left of summer. Ryan was out-of-town with the boys until yesterday, so it was just Maddux and me for most of the weekend. Here’s the recap for ya -

Friday night:

Babysat for my sister – two nieces and a nephew. Easy peasy.

Saturday:

Woke up and walked to the dog park.

Took along a coffee with almond milk for me and some dog food (for training) for Maddux. My to go coffee cup is coming in handy.

After an hour of playing, running, and butt sniffing, we headed home.

Maddy took a nap, while I went to the beach with a couple of friends.

We first sat by the water, but it was way too windy, so we headed up to the beach bar instead.

Good decision.

A couple Leinenkugel’s Summer Shandys were enjoyed.

Along with chips and guacamole

And cheese quesadillas.

Nice day at the beach. I headed home around dinnertime and Maddux and I spent some quality time on the couch with the remote that evening. Party.

Sunday:

Lazy Sunday morning – had some coffee, browsed the Sunday ads, did a little cleaning, took a million pictures of Maddux…

For lunch I made Cheezy Broccoli and Rice. I made another batch of Cheeze Sauce (I may be addicted) and cooked up some 3 minute microwave brown rice.

I added steamed broccoli, onions, and diced tomato to the brown rice.

Then I added the cheeze sauce and stirred it all together.

Chee-zay!

When Ryan got home, we walked to the dog park. Two days in a row, lucky dog. It’s so nice having one within walking distance, we usually go several times a week.

We went to Riverview Tavern for dinner. They have outside seating and that’s what we were looking for.

I ordered the Goat Cheese Salad “diced apples, candied walnuts, fried goat cheese, diced tomatoes, mixed greens, sun-dried tomato vinaigrette.

And some sweet potato fries on the side.

All very good. I ate the majority of the salad, but hardly made a dent in the fries. I wish you could just order a handful of fries instead of the entire basket. I feel like I waste so much food at restaurants because the portion sizes are so darn big.

Later in the evening we took a walk to Scooter’s and got some ice cream. Maddux got his usual puppy cone. I got vanilla caramel swirl. Ryan got black raspberry Italian ice.

And that was my weekend. Looking back, the only thing I see missing is a workout or two… or ten. Yikes, food. That is all the motivation I need to make this a good workout week.

Later, peeps!

Best part of your weekend? Mine was the trip to Scooter’s last night. I love summer evening walks to get ice cream with my boys!
