Fri-day, Fri-day, Fri-day!
But first, let me tell you about my busy day yesterday.
Lunch:

A slaw made of:
- cabbage
- carrots
- apple
- onion
- slivered almonds
Mixed with a dressing of red wine vinegar, mustard, agave nectar, and salt and pepper.

Chips and spicy hummus on the side.
I also made some lavender lemonade. After having the lavender lemonade from Native Foods the other day, I decided to make some myself.

Freshly squeezed lemon juice, stevia, lavender sprigs, and water.

Easy peasy.
After work it was gym time. I took an hour-long Muscle Max class followed by an hour-long Piloxing class. Yes, I was there for two hours. I thought the Piloxing class was only a half hour, but turns out it was a full hour. I REALLY liked Piloxing, though. It combines boxing with Pilates, ballet, and dance moves. You up your heart rate with the boxing, then do Pilates and ballet moves for toning and sculpting. The instructor also incorporated some fun dance moves in there. It’s fast paced and fun and I’ll definitely be taking it again.
After the gym I ran home, grabbed Maddux, and headed straight back out the door for his training class. He did GREAT last night. He learned BED. There was a towel on the floor that was his “bed.” I would point to it and say “bed” and he would run over and lie down on it. What a good boy!
By the time I got home it was 9pm and I was absolutely starving.
Dinner was this:
Ok, well not just that. I also had some whole wheat spaghetti with Earth Balance, nutritional yeast, and s&p. Fancy.
I inhaled the pasta, but definitely didn’t finish that whole glass of wine. I was too exhausted and hit the hay instead.
This morning Maddux decided to get up at 5am. Ugh, what is going on, dog? That’s like the 4th day this week! Usually he gets up with me around 7, so this 5am business is ridiculous!
So Ryan and I shipped his little doggy ass off to doggy daycare for the day. Stopped at DD on the way home.
DD K-Cups. Yay! Plus a sprinkle donut.

That slaw looks so good! Apples and almonds seem like they would add such a nice flavor/texture…and hello tortilla chips! Yum yum.

I almost never enjoy donuts, but hit up D&D last night for some hot apple cider and pumpkin donuts–not too shabby!

Just so you know, that slaw looks PHENOMENAL. Seriously- I’ve been wanting to make slaw but have been under the impression that it was super tough to make!
Did you buy the cabbage already sliced? Or was that something you did yourself?

I just bought the bagged shredded cabbage. It took < 5 minutes to throw together, really couldn't be easier. I made a creamier version the other night using Veganaise.
That slaw sounds like a fabulous combination!

That is such a creative way to make lemonade…and it looks beautiful!! I have always wanted to try piloxing. It looks like you had a great workout!

Yeah, you should totally try Piloxing. I felt like I used muscles that don’t normally get a workout
You made me tired just reading this post. haha. Your food always looks so good…and that lemonade…yum! I don’t think I’ve ever seen lavender sprigs at Hyvee, I wonder if I can cut them off my lavender bush outside? Glad to hear Mad Dog learned ‘bed’, because if he’s waking you at 5am, you need to tell him “BED!” ;P

I don’t see why you couldn’t cut them straight off the bush. The problem is, Maddux is already IN BED when he wakes up at 5am – he’s still in his crate and he’s crying to get out! One big pitfall of living in a loft, when he cries, there is no sleeping through it!
Your lemonade looks delicious!! I may have to make some soon..too bad it’s like already december in chicago lol. What’s the cupcake wine? Is it sweet? (probably a dumb question lol)

Haha, nope it’s not sweet, it’s just a regular Cabernet Sauvignon. The vineyard’s name is Cupcake Vineyards – cute!

The slaw seriously looks soo good. I just might have to buy the ingredients when we go out grocery shopping today.
Did you use regular mustard or like a dijon mustard?

I used regular mustard because that’s all I had, but I think dijon would be better.
