or at least for the next couple of nights.
I’ve been a little under the weather the past couple of days. Seems like everyone else has been lately, so I guess it’s my turn. I just have a cold, but it’s pretty much taken me out of commission. 9 times outta 10 my colds = sore, scratchy throat that makes me nauseous. Boo. I think I’d rather have a cough or runny nose.
So, the only things I’ve been up to are working and watching TV. Law and Order + a little LMN for a hefty dose of estrogen. I watched the Charlie Sheen Roast last night. I’m not a fan of him, his shenanigans, or the whole “winning” thing. I think he was getting far too much attention for acting like a jackass. That being said, I’m not gonna lie – his roast was pretty frickin’ hilarious.
The only cooking I’ve done since baking the Pumpkin Bars on Friday night was dinner last night. And for not feeling well, it turned out pretty darn good.
1 (8-ounce) block of tempeh
1/2 onion, chopped
1 (14.5-ounce) can diced tomatoes
1 (6-ounce) can tomato paste
6-ounces whole wheat rotini, cooked
Salt & Pepper
Using a cheese grater, grate the block of tempeh. Cook ground tempeh and chopped onion in a little bit of olive oil until onion is soft and tempeh starts to brown. Add diced tomatoes, tomato paste, 1/2 cup of water, and seasonings and let simmer for 5 minutes. Add the cooked rotini, stir well, and serve!
I ended up topping mine with nutritional yeast just before eating. This recipe would also be great with added veggies – green pepper, mushrooms, etc.
Anyway, I’m hoping by tomorrow I’ll be close to normal. I’m getting a little stir crazy and could seriously use a trip to the gym. Funny how a year ago I could go weeks without working out. Now, I miss a few days and I’m craving a sweaty workout. Guess that’s what happens when working out becomes routine. Pretty awesome.
