I made these little beauties last night. Just a few ingredients. Easy peasy.

Pumpkin Ice Cream Bites
1 pint vanilla ice cream, softened (I used dairy free – So Delicious Vanilla)
1/2 cup pumpkin puree
1 teaspoon pumpkin pie spice
Mix together the ice cream, pumpkin, and pumpkin pie spice. Put ice cream in molds or a pan and freeze until hard.
For the chocolate coating I used 1 cup of vegan chocolate chips and 1 tablespoon of vegetable oil that I melted in the microwave.
When ice cream is fully frozen, top or coat with melted chocolate and immediately put back in freezer until ready to serve.

Mine look like they have salt on them, but it’s really just ice crystals because my freezer’s cranked up to crazy cold.


My chocolate-coating skills are pretty subpar, but who really cares. These things are fantastic! Enjoy!

Oh wow I totally hafta try these like ASAP! What molds did u use to put the filling in when u put it in the freezer? And how did u get the chocolate so perfectly covered on all sides?
I used a silicone brownie squares mold. For the ones that I covered completely in chocolate – I stuck a toothpick in each one and dipped them in the chocolate. I just used a spoon to spread it around.
