Brittle and Pancakes

Hey! Guess who is blogging on a Saturday night?!

I know, shocker. I’m pretty sure this is a first. I’m babysitting for my sister and the wee ones are in bed, so I might as well.

I’ve had a low-key, yet enjoyable weekend so far. Last night, I made Sesame Seed Brittle.

When I attended the Clean Eating Cooking Class a couple of months ago, this was one of the recipes that was made. It was also my favorite recipe of the night, so I’ve had plans to recreate it ever since.

The ingredients:

- Pumpkin seeds

- Sesame seeds

- Sunflower seeds

- Nori

- Maple syrup

I know nori sounds like an odd addition, but it works. Give it a try, it’s good stuff.

I also spent a little time in the kitchen today, whipping up some pancakes. I took the lazy route and just used a boxed mix, but I used this instead of regular milk -

So Delicious Mint Chocolate Coconut Milk.

It added just a slight hint of mint chocolate flavor to the pancakes. I was a fan. That flavor of coconut milk is also awesome in coffee. Tastes like a peppermint mocha.
