Hey! Guess who is blogging on a Saturday night?!
I know, shocker. I’m pretty sure this is a first. I’m babysitting for my sister and the wee ones are in bed, so I might as well.
I’ve had a low-key, yet enjoyable weekend so far. Last night, I made Sesame Seed Brittle.
When I attended the Clean Eating Cooking Class a couple of months ago, this was one of the recipes that was made. It was also my favorite recipe of the night, so I’ve had plans to recreate it ever since.
The ingredients:
- Pumpkin seeds
- Sesame seeds
- Sunflower seeds
- Nori
- Maple syrup

I know nori sounds like an odd addition, but it works. Give it a try, it’s good stuff.
I also spent a little time in the kitchen today, whipping up some pancakes. I took the lazy route and just used a boxed mix, but I used this instead of regular milk -

So Delicious Mint Chocolate Coconut Milk.

It added just a slight hint of mint chocolate flavor to the pancakes. I was a fan. That flavor of coconut milk is also awesome in coffee. Tastes like a peppermint mocha.

Yumm mint chocolate coconut milk?? Where has this been all my life! lol I am so plain when it comes to milk..I only drink almond milk so it’s time that this girl expands her horizons lol

I was out Saturday night, but I did do a lot of relaxing and stayed at home for most of Saturday and Sunday afternoons. I needed it!
That brittle looks really good and same with the So Delicious Mint Chocolate Coconut Milk. yum!
I’ve tried coconut milk a few times. It’s interesting of what you can think to put it in… I really liked it in oatmeal with shredded coconut on top… just sayin’.
