These “crepes” are fantastic. They are low carb and contain a good amount of protein. I found the original recipe here, but ended up altering it a bit.
Protein Crepes
makes 1 large or 2 small crepes
1 egg
1 egg white
3 tbs cream cheese, softened (I actually used Tofutti Better Than Cream Cheese because that’s what I had on hand)
1/2 packet stevia
1/2 tsp cinnamon
Beat the eggs and cream cheese together. Add cinnamon and stevia. Spray a skillet with nonstick cooking spray and heat on medium. When heated, pour in the egg mixture, coating the entire bottom of the skillet. Cook for several minutes or until both sides have cooked through. Fill or top with whatever you like – syrup, fruit, peanut butter. I filled mine with a tbs of plain Greek yogurt mixed with a tsp of peanut butter.
