
Sikil Pak is a Mayan pumpkin seed dip. Pumpkin seeds are not only a great source of vitamins and minerals, but they are also a fantastic source of protein, with 7g per 1/4 cup serving.
Sikil Pak is super easy to make. The only ingredients in this version, from The Mija Chronicals, are pumpkin seeds, tomatillos, garlic, onion, and a little sea salt. Traditionally, it also contains cilantro, but I’m not a huge fan so I left it out. I also found other recipes for Sikil Pak that used regular tomatoes instead of tomatillos.
To make this recipe, I simply roasted (er…grilled) the tomatillos, garlic, and onion on a grill pan. I also chose to toast the pumpkin seeds.

Then I put the cooked (and cooled) ingredients in the food processor until smooth. Serve at room temperature with tortilla chips or keep it light and serve with veggies.

If divided into 3 servings, each serving contains approximately:
Calories: 165
Carbs: 9g
Protein: 7g

As for your question the other day on if you could make coconut flour with the coconut flakes, you can. Here are some directions.

Chips & dip are pretty much a staple for me so I’m always looking for new dip recipes. And I love pumpkin seeds. There’s a 90% chance this dip will make an appearance in my life by the end of the week.
