Yesterday was about as perfect as a day during the workweek can be for me. Healthy (and tasty) food, a great workout, and a productive day work wise.
Breakfast was very much like Monday’s. Only this time, I also added banana slices to my cereal.

Lunch was like Monday’s, as well.

But, I added a side of apple slices this time.

Why are apple slices so much better than whole apples?
Maddux and I also went on a walk on my lunch break. Not just a stroll around the neighborhood, we actually had a destination – to sign him up for school! Maddux will be taking a training class so we can work on things such as attention, stay, leash walking, etc. Basenjis are notoriously hard to train and we are struggling with a few things, mainly his stubbornness when walking (he will sit and not budge when he doesn’t want to walk). Hope this class helps us and him!
After work I went to the gym. I love Tuesdays because I usually do three classes in a row that are all totally different and fun. I started with a 30 minute sculpting express class, then did a 15 minute ab class, and then did a 45 minute cardio hip hop class. A little sculpting, a little cardio, and no boredom!
Dinner was a perfect summer meal. A Dr. Praeger’s veggie burger topped with spinach, ketchup, and Daiya Pepperjack (which is fantastic, btw), served on an Arnold Sandwich Thin.

Oh my goodness, that corn! I was born and raised in Iowa. I love my corn. Want to know the easiest way to cook corn on the cob? Throw it in the oven at 350° for 25-30 minutes. That’s it. Leave the husk on, it will trap in the moisture, leaving you with juicy, tender corn. The husk and silk will peel away easily once it’s cooked.

I actually did a whole post about how I haven’t yet used the grills in our courtyard and usually end up plunking my corn in the oven! It works just as well! That dinner looks fabulous and I don’t know why sliced apples are so much better than whole, but I totally agree with you
That’s funny because we have grills in the side yard of our building that we have yet to use either!
I don’t think I’ve ever thought about the oven! We usually boiled or grilled our corn.

My parents always boiled or grilled the corn too. I found an easier way cause I’m super lazy

I usually steam my corn while the meat is being grilled…. corn on the cob is soo good!!!
I am trying this right now…. corn is in the oven. But normally I steam it. You don’t have to wait until the water boils. Works well. But I had corn still in the husk and saw this on Pinterest. I thought, why not!

I tried your method and it took much longer for me, around 45min to 1 hour. The husks on Southern Utah corn are very very thick, so if you find this is the case with your corn, perhaps try thinning the husk, but not removing the whole thing. It is a fabulous result when done properly, thank you so much for lending a hand to my lazy cooking skills.
I would like to try the corn in the oven , but not sure if u soak the corn first in water and then put in oven ???? Because I make the corn on the grill but I soak it first then put on grill. Please let me know . Thank you sandy
I don’t soak them beforehand when using this method.

Do you wrap the corn in foil before it goes into the oven? Or just the husks on the outside and place on baking sheets or something? Thanks!!
No need to wrap in foil, just leave them in the husks and put on a baking sheet
Dude, you’re from Chicago? What a small Pinterest world! So, I just made some sweet corn according to your instruction and it turned out just as you said – t’was perfect! It even left more room on our Weber for the veggie burgers. I’m subscribing. I’m a fan. Glad I found you!

Just throw it in the microwave husk and all for 3 minutes per ear. Careful, it will be hot, but just peel the husk away and butter it up. You’ll never make it any other way again !
That’s how I do it! Fast and delish!
Cook my corn in the microwave
4 minutes per ear
Leave husk on
When done cut off the big end and hold tassel
And corn will pop right out

I’m trying the corn recipe now. I have to say though I MUST run some water over them first. The thought of bugs in the husks has me second guessing this one. We will see how it goes. I plan on blogging about it if you want to bookmark my page.

Thanks for the tip for cooking corn on the cob in the oven! We are having our neighbors over for a cookout and this will make cooking the corn so much easier!
Microwave.. I avoid using the oven in hot weather. My favorite things about summer are corn, watemelon, peaches, canteloupe, cherries, and air conditioning!

do you need to take any of the silk out before hand? I am cooking this tonight for our family dinner, and I so excited! I love fresh corn!
If there is a bunch of silk hanging off the end you might want to cut it off, but otherwise no. Leave it and once it’s cooked it all peels away super easily.
My concern is what if there are bugs in the corn. Shouldn’t you rinse the corn first before baking???? I love protein, but really????
this sounds like a great idea! i boil or microwave the ears, but microwaving them takes quite a while if you have several ears and boiling them takes time taking the husks off, so oven cooking them sounds GREAT! – thanks
Not bad… but it takes an hour, not 25-30 minutes. I scrubbed the corn after husking it, to make sure it was clean. Great idea!
