I started and ended yesterday with breakfast. Oh yes.
First up. A delicious parfait. I started with Whole Soy & Co. Vanilla Soy Yogurt,

then added chia seeds, puffed kamut cereal, sliced banana, sliced strawberries, and a sprinkling of oats.


Plus a coffee with almond milk. This breakfast was fabulous!

Not to be outdone by breakfast, lunch really stepped up to the plate as well.

A quesadilla filled with green pepper, tomato, onion, spinach, and Daiya Pepperjack Shreds.

On the side, I had Brussels sprouts sauteed in evoo and sprinkled with sea salt and pepper.

Love Brussels sprouts prepared this way. So simple and easy. Also on the side – a sliced apple, per usual.


This was no measly lunch, this was a full on dinner-caliber MEAL. So, for dinner, I threw in the towel and had breakfast again.

The old-standby, homemade waffles. Topped with banana slices, Earth Balance, maple syrup, and powdered sugar. A not-quite-ripe white peach on the side.


Oh yeah. This dinner-breakfast may have actually outdone breakfast-breakfast.
Thank goodness I got in a gym sesh yesterday. A 20 minute interval workout on the treadmill (1 min at 5 mph, 1 min at 8 mph) followed by a 30 minute cardio sculpting class. The interval workout wasn’t too challenging, but since I was taking a class afterward I wasn’t trying to expend all my energy. If I were doing it again solo, I think I would make it a little more difficult.

YUM. Everything in this post looks delicious. Our breakfasts were so similar! That waffle looks amazing though…I want it right now!
