Happy Friday!! For real. I’m in such a good mood on Friday mornings. Who isn’t? Work week is (almost) over! Weekend is so close you can almost smell the bbqs, beer, and beachy air But, before I get onto the important stuff, like weekend plans, I’ll give you a quick recap of yesterday.
Breakfast: Another parfait! Vanilla soy yogurt, chia seeds, oats, banana slices, and vegan chocolate chips. The chocolate chips were key!
Plus a coffee with almond milk.
I’m currently on the hunt for a new coffee mug or two. Let me know if you know of any good ones!
Lunch: An everything bagel thin topped with Tofutti cream cheese and spinach.
A raw kale salad – kale, Bragg’s Liquid Aminos, nutritional yeast.
And apple slices with peanut butter.
A random assortment of things, but it satisfied my cravings for salty and sweet.
Dinner: Tofu Shiratake noodles sauteed with spinach, onion, Tofutti sour cream, nutritional yeast, garlic powder, chili powder, and s & p.
The last of the Brussels sprouts on the side.
Plus a glass of almond milk.
Ryan had class last night, so as usual, I made a dinner he wouldn’t like
Workout: An hour long Muscle Max class. It was a good one. One of my friends took the class yesterday too, so that’s always a bonus.
In other news, how cute is he??
What a baby! He’s ready for the weekend – hoping for a trip or two to the dog park! And I am really excited for the weekend because my Mom is coming into town to visit. She’s staying at my sister’s house, so I’m sure I’ll be over there most of the weekend. My nephew’s 4th Birthday Party is tomorrow morning. Woohoo, party! I may also try and get in a little pool action, it’s supposed to be H-O-T.
